In 2019, Lisa and her husband Colin were 788 miles / 1,270 km into their PCT thru-hike when Lisa was diagnosed with type 1 diabetes: an autoimmune disease in which the body can no longer produce insulin to manage blood sugar levels. Along with insulin injections, she adopted a low carb lifestyle to help reduce fluctuations in blood sugar caused largely by carbs, but couldn't find any backcountry meals that weren't packed with rice, potatoes, pasta and sugar. She was left packing over 10 pounds of cheese and pepperoni for a multi day hike, and it simply wasn't sustainable or practical.
She didn't want food to be a barrier to anyone's adventures, and if a better solution didn't exist then it was time someone created one. So she did. Delicious meals packed with protein and nutrition, loved by carb-lovers and low-carbers alike.
Now she's returning to finish what she started, from beginning to end. This time, with insulin. And this time, fueled by real food for real adventures: Flat Out Feasts.
